This is the estate's flagship, first made in 1989 from its oldest parcels. That includes Grenache vines planted in 1901, joined by Mourvèdre and Syrah depending on the year. Those old vines grow on the classic Châteauneuf mix of rolled galets, red clay, sand and limestone. \"Papet\" is Provençal for grandfather (a word that also rang out in the late '80s thanks to Yves Montand's Le Papet in Jean de Florette), and the cuvée is named for the family's own. The Sabons say they never set out to make the most powerful Châteauneuf, just the most \"juste,\" meaning true and balanced, and they build the Papet as a vin de garde meant to age for decades while staying fresh.
