Les Murs comes from a single tiny parcel of 70- to 100-year-old Chenin Blanc, planted on barely a hand's depth of soil directly over tuffeau limestone and worked by horse. Twin brothers Guillaume and Baptiste Frey founded Clos Thierriere in 2021 (they trained under Vincent Careme) and farm organically; this cuvee is fermented with wild yeast and aged around a year or more in seasoned oak, which gives it texture and depth without ever tasting oaky. It's a dry Vouvray (sec) - no sweetness here, just Chenin's electric line of fruit and stone.
