Denis Bachelet has worked the family domaine all his life (his first vintage was 1982), and his farming is exacting: very low yields, every grape checked, and wines of striking purity whatever the appellation on the label. This one comes from just 0.6 hectares of Pinot Noir in two lieux-dits, Pressonier and Grand Champs, on limestone and clay facing southeast, with vines planted in 1977 and 1986. In the cellar it gets the house treatment: fully destemmed, native-yeast fermentation, and bottled by hand without fining or filtration. The result is Pinot fruit with nothing covering it up, which is exactly why a basic Bourgogne from this cellar is worth your attention.
