The 2023 is 90% Furmint and 10% Hárslevelű, mostly from older vines. Many separate plots were picked by hand and each was made on its own: the Furmint was pressed as whole bunches, and the Hárslevelű was destemmed and cold-soaked for 24 hours. It fermented in 225- and 500-litre barrels, mostly a few years old, with only 10% new Hungarian oak from Zemplén. The blend then rested on its full lees in tank before bottling, so the oak adds polish without taking over. Disznókő calls 2023 a great vintage: it was warm but wet, and the grapes ripened perfectly in mid-September, a recipe for fresh, balanced dry whites. The estate is one of the only ones in Tokaj in a single piece, on the south- and west-facing slopes of three small volcanic hills. Its name, first recorded in 1413, means \"rock of the wild boar,\" after a large rock on a small hill overlooking the vineyards. If you think of Tokaj as dessert wine only, this bottle is a good reason to think again.
