The site is shared between Chardonnay and Pinot Noir; this is the topped-up (ouillé) white, fermented spontaneously and raised about two years in 228L barrels with a small fraction new and no added sulfur. The clay subsoils give En Barberon a famously smoky, almost gunflint character — creamier and spicier than Tissot's purer limestone cuvées, with a citrus-pith bitterness on the finish that pulls everything taut.
