Stéphane Erissé was a builder before he apprenticed under Antoine Foucault of Domaine du Collier. He went on to purchase a small domaine (just 3ha) of vines which had been farmed organically for 20+ years. He does not use any chemicals in the vines, works with minimal intervention in the cellar and adds just a touch of SO2 at bottling, if any. 'Les Fauraunieres' Anjou Blanc comes from 1.4 hectares of 100 year old Chenin Blanc, planted in soils of schist, yellow clay and quartz. This is rich, minerally and powerful, and we can't help but see traces of Stéphane's education at Domaine du Collier.
