It's dry Savagnin, and at Bourdy it spends seven years in small, old oak barrels that are never topped up. A film of yeast forms on the surface, and that's where the nutty, curry-spice character comes from. It tastes unlike any other white you'll drink. The vines grow on deep grey clays and old Lias and Triassic marls, and the Jura's heavy rain keeps those soils cool enough to hold on to Savagnin's naturally high acidity. That acidity is the backbone that lets these wines last, and the family still keeps Château-Chalon going back to 1865 to prove it. The domaine farms biodynamically, and Laura Bourdy took over in 2022.
