Courbis, Cornas La Sabarotte, 2016

This is Courbis' masterpiece produced entirely from a plot in Sabarotte purchased from Noel Verset. The site is up high, where Sabarotte is a sold slab of granite that gifts the wine power and finesse.

Courbis makes this in a polished, clean style.  It shows a bit of oak in its youth but always manages to age into a true beauty. Here is Josh Raynolds' note from Vinous:

"Bright purple. Highly perfumed black and blue fruit liqueur aromas, along with hints of exotic spices, potpourri, olive and smoky minerals. Densely packed cassis, blueberry, spicecake and violet pastille flavors show outstanding clarity and deepen steadily as the wine stretches out. Finishes long and smoky, with powerful violet and mineral qualities and mounting tannins."

"The top Cornas here is the 2016 Cornas la Sabarotte. It’s aging in 80% new oak until being bottled in June 2018. Yes, it’s an unabashedly modern style, full-bodied, creamy in texture and offering pristine purple raspberry fruit, but man is this good. It will be hard to keep from drinking this in its first 5-10 years." -Julia Coney

"Matured in 85% new oak barriques for 16 months, this is full-bodied, rich and polished. The fruit is very ripe and intense, and the tannins plentiful, with little in terms of grain or fibre to the texture - the effect is glossy and smooth, and it handles its new oak well, only making itself known on the finish." -Jeannie Cho Lee

"Alluring, with a gilding of modern-style mocha and bacon-accented toast that melds perfectly into the core of gently steeped plum and blackberry fruit, while light black olive, anise and juniper notes add range and texture through the finish." -James Molesworth
