Les Servières is his pure Cinsault, a grape usually relegated to rosé but here taken completely seriously: old vines, low yields and a wine of real lift and finesse. Bottled as an IGP because Cinsault sits outside the appellation rules, it's the south of France's answer to a fresh, drinkable red with a savory backbone. This 2012 is a back-vintage now showing some maturity, so expect the fruit to have softened into earthier, more savory territory. Drink it on the cooler side.

//cdn.shopify.com/s/files/1/0125/1518/0601/files/Domaine-dAupilhac-IGP-Vin-de-Pays-Les-Servieres-2012-Red-Wine-Flatiron-Wines-Spirits-New-York.jpg?v=1779477423
https://nyc.flatiron-wines.com/products/domaine-daupilhac-igp-vin-de-pays-les-servieres-2012-gfcell-pvt
