La Pépie is Pépière's everyday cuvée, but nothing about the farming or the winemaking is casual: whole clusters go into a pneumatic press filled by gravity, without crushing, then ferment slowly with native yeasts and rest on their lees in underground cement tanks for up to a year, with minimal sulfur. The fruit comes from slopes facing the Maine river, 30-year-old vines on average, rooted in Clisson and Château-Thébaud granite closest to the river and gneiss further out — that granite is what gives Melon de Bourgogne its cut and its salty, stony finish. Farming is organic (or in conversion, including the neighboring grower who contributes fruit): no herbicides, soils ploughed and scratched, nothing but sulphur, copper and plant preparations in the vineyard. Domaine de la Pépière was founded in 1984 by Marc Ollivier and is now in the hands of Rémi Branger and Gwénaëlle Croix, who haven't let the standard slip an inch.
