Jacky Blot did as much as anyone to define what Montlouis-sur-Loire means, and his method is the opposite of the clean, cold, quick fermentation most white wine gets: indigenous yeasts, deliberate early exposure to oxygen, a long slow fermentation in barrel (20% new, the rest one to four years old), malolactic blocked, then months resting in steel before bottling to firm up the texture. He refused residual sugar on principle, convinced that even a few grams blur Chenin's transparency — he called it \"the school of Montlouis.\" The vines are farmed organically.
