Alain and Agnès Carrère founded Majas in 1992 and now farm 30 certified-organic hectares entirely within the commune of Caudiès-de-Fenouillèdes, up in the Fenouillèdes valley of the Eastern Pyrenees at 350 to 400 meters, where the Tramontane keeps things honest. The Carignan comes off vines ranging from young plantings to gnarled 120-year-old survivors — remarkable, given that roughly three-quarters of the region's vines were pulled out in the co-op era and growers like Alain's father were pushed to replant Merlot and Cabernet for \"Bordeaux style\" bottlings. Alain rebuilt the place with help from Tom Lubbe of Matassa, converting to organics and throwing out the commercial yeasts entirely.
