It comes from cool hillside parcels around Rosheim and Rosenwiller on rich clay, sites chosen precisely because they give a generous, fruit-driven style of Pinot rather than a brooding one. Everything is destemmed, fermented only on indigenous yeasts at around 19°C with no enzymes and no fining, and extraction is gentle pumping-over — texture is the goal here, not power. The Einhart family has farmed at the foot of the Vosges in Rosenwiller since the 1820s; Nicolas Einhart moved the estate to organic farming back in 2003, and his son Théo, the seventh generation, came home in 2020 to work alongside him. They use dynamised biodynamic preparations but skip certification entirely, preferring to work by observation, plot by plot, across a mosaic of some sixty parcels.
