Thick skins and very little juice meant growers needed noticeably more fruit to fill each barrel, and the wines came out deeply colored and concentrated but braced by an unusually firm tartaric backbone, so the freshness is real rather than borrowed. In most hands that combination turns showy; in Lafarge's it stays Volnay. Frederic Lafarge and daughter Clothilde farm the village parcels of Les Famines, Les Buttes and Cros Martin, roughly 60-year-old vines on clay-limestone, with Ecocert organic and Demeter biodynamic certification, horses in the rows and chickens working the weeds. The wine is fully destemmed, fermented with ambient yeasts over two to three weeks, aged 18 months in used barrels and bottled unfined and unfiltered.
