Clos des Bouchères is a 1.38-hectare clos carved out of the 4.4-hectare Les Bouchères climat, planted in 1950 and 1980, which Roulot acquired in 2011; its shallow, stony soils sit over oolitic limestone laced with marl and clamshells, and the domaine's importer credits exactly that for the salinity that runs through the wine. The domaine characterizes it as a stony vineyard, the one most like Perrières — high praise in this commune. The winemaking is deliberately hands-off: natural yeasts only, a year on lees in barrel and six months in vat, with new oak kept on a short leash so the limestone does the talking.
