Stéphane Sérol took over the family domaine in 1996, cleared and replanted the best hillsides, and deliberately stuck with the historic local strain, Gamay Saint-Romain, partly to keep it from disappearing. Éclat de Granite is his blend of granite-soil parcels — sandy, gravelly, rocky — with vines ranging from the mid-1930s to the mid-2000s, farmed organically and biodynamically with hand work and composted manure made on the estate. The winemaking is deliberately transparent: hand-harvested fruit sorted at the winery, concrete tanks filled by gravity with 20% whole clusters, indigenous yeasts, a slow 15 to 20 day maceration, then 11 months in cement. No oak anywhere, which is exactly right for a wine whose whole point is the crunch and lift of granite.
