It is made by the ancestral method: direct-pressed, fermented cool on indigenous yeasts, bottled before fermentation finishes, then disgorged so there is no sediment left in the glass. The result is bone dry, at roughly 2 grams of residual sugar, low in alcohol, and finer and more tightly wound than most wines in this category.
