Hermannshöhle has been the region's top-ranked site for more than a century, and it's still the benchmark every other Nahe vineyard gets measured against. The slope faces due south at a steep 40 to 60 percent gradient, and its blackish-grey slate is mixed with volcanic rock, porphyry and limestone. The name has a good story too: \"Höhle\" refers to a small mine cut into the middle of the hillside, and \"Hermann\" is thought to come from Hermes, which probably points to an ancient place of worship on the site. The 2007 growing season started with a hot April and record-early flowering, then a cool summer slowed things down and a long, fine autumn finished the ripening. That left Germany's sweet wines with real acidity under the sugar, and that acidity is what carries an Auslese through years in the cellar. This is a chance to taste what that site gave in a vintage built for aging.
