The secret to the magic of Drappier is they operate much more in the vein of a grower: they own most of their vines, farm organically and biodynamically (sometimes plowing with a horse), focus on terroir with a slew of single parcel bottlings and continue to push the quality forward with experimentation in every aspect, never settling for status quo. But being able to buy grapes also gives them the flexibility of a House, along with much greater stocks of reserve wine and a huge Cistercian cellar to store a LOT of library bottles. 2002 was the first outstanding vintage of this century (2008 being the next) and with 18 years of bottle age they are really in their prime. This isn’t to say these beauties won’t keep maturing — they will, as demonstrated by several 1979 bottles opened by staff last year. The wine is in a perfect place: vinous and silky, full of pétillant mousse. The structure and opulence of the Pinot Noir — 80% of the blend — imbues this wine power, finesse, and an incredibly long, seductive finish.
