It's a 1er Cru Blanc de Noirs, meaning white Champagne made entirely from Pinot Noir. It's also bottled Brut Nature, so no sugar is added at dosage and the fruit and the site have nowhere to hide. Gamet buys his grapes from his closest friends, who also happen to be some of Champagne's best young growers, and the farming for this cuvée is practicing organic. He makes and ages every bottle in a tiny old family cellar he took back at the top of the village of Fleury-la-Rivière. For Écume's first releases he worked with growers in Mardeuil, a very cold village with slopes facing north and west, and in Chamery 1er Cru in the Petite Montagne de Reims, known for sandier soils and real slopes that climb to almost 200 meters. The idea is tiny quantities of vinous, complex Champagne, made by someone chasing his own curiosity rather than a house style.
