La Santa de Úrsula comes from three north-facing parcels in La Corujera, in Tacoronte-Acentejo. The vines grow at 350 to 650 meters, trained low to the ground in sand and clay over red basalt. It's mostly Negramoll and Listán Negro with a small amount of white Listán Blanco, all hand-picked and foot-trodden. After that it spends eight months in neutral French barrels and is bottled unfined and unfiltered. Envínate (the name means \"wine yourself\") is four friends who have built their project around letting overlooked Spanish vineyards speak for themselves.
