Phylloxera never reached the Canary Islands, so these 70-plus-year-old vines still grow on their own roots. They aren't trained on wires but left to sprawl along the ground, and the soil is worked by hand with no chemicals. Envínate (the name means roughly \"wine yourself\") is four friends who met studying winegrowing in Alicante, and they're just as light-handed in the cellar. The wine shows its place first and the winemaking barely at all.
