The fruit was harvested as 'drops' throughout October, then fermented in tank before being racked into barrel mid-fermentation in November for extended aging and complexity development. At 7.3% ABV, the cider achieves remarkable balance between the Newtown Pippin's tart, structured character and subtle sweetness from careful fermentation management.
