Vendanges Tardives means \"late harvest.\" The family's approach is to leave the grapes on the vine until they shrivel and turn almost candied in the autumn sun. Their village, Dambach-la-Ville, makes that possible. It's very dry, at around 550 mm of rain a year, with sandy, light, well-drained soils on granite slopes, so the fruit ripens fully without botrytis. Florian and Mathilde come from a family that has made wine here since 1590, across 14 generations. They keep the domaine at about 11 acres so they can do every bit of the work themselves, with no employees. Florian also helped found Vinabio, an organic charter for Alsace wines that sharply cuts sulfites, bans other additives and forbids machine harvesting.
