Tequileña (NOM 1146), in the town of Tequila, Jalisco, was the first distillery to age tequila in French oak casks, and the first to release an extra añejo once the category was officially created in 2006. The man in charge, master distiller Enrique Fonseca, started out as a fourth-generation agavero (an agave grower). That helps explain why Fuenteseca treats agave the way a serious winemaker treats grapes: it draws on agave from different soil types. The cooking gets the same care. Tequileña uses Bacardi's original autoclaves, modified to run at a lower temperature and about half the usual pressure. This is a tequila for the brown-spirits drinker who wants to see what real patience does to agave.
