Gaspard farms just over three hectares around Ecueil in the Montagne de Reims, land his family worked under the Vincent Brochet name before he took it over and began signing his own bottles in 2017; for this wine he reaches back and uses the historic name of the family house, Domaine les Croix. It's built on the excellent 2016 vintage and given a very long rest on the lees, and the extra time shows: ripe yellow fruit and dried fruit, candied citrus, brioche and fine pastry, with the toast and spice that only years in the cellar can put there. The palate is broad and creamy, with real depth, and the extra brut finish keeps it honest.
