Canonica started the Langhe bottling in 2013 with fruit from what he himself considered the least interesting parts of his Paiagallo and Grinzane Cavour vineyards. That's an unusually honest way to describe your own wine, and it tells you how high he sets the bar for his Barolos. The work is the same rigorous traditional approach he uses across the estate. In the vineyard there are no herbicides, pesticides or fertilizers, only copper and sulfur. In the cellar, the wine macerates for 30 to 40 days on native yeasts, goes through a vertical hand press and ages in cement and Slavonian oak. The whole estate is under two hectares of calcareous marl and clay, farmed organically without certification, and Canonica runs a bed and breakfast in the middle of Barolo village. With an estate this small, finding a 2015 now is worth noticing.
