Giovanni Canonica first made this cuvée in 2013, from the parts of his Paiagallo and Grinzane Cavour vineyards that he himself judged the least interesting. (We like a grower who will tell you which of his rows he rates lowest.) Grinzane Cavour is the small holding he inherited in the early 2010s. Everything else is classic Canonica. The vines are farmed organically, without certification, with nothing but copper and sulfur. The grapes are destemmed, macerated for 30 to 40 days with native yeasts, pressed in a vertical hand press and aged in cement and Slavonian oak, all in the cellars under the small agriturismo he runs with his family in Barolo village.
