Prisme blends single-vineyard Chardonnay from the Grand Cru villages of Cramant, Chouilly and Oiry. Richard Fouquet's idea, and the reason for the name, is that you taste the wine through the \"prism\" of the terroir. The Fouquet family has farmed in Cramant since 1885. Richard, the fifth generation, and his wife Karine now run the estate, farming organically and doing the work by hand. In the cellar they stay out of the way: no malolactic fermentation, and Prisme gets at least 40 months on its lees. The bottles rest in cold cellars cut into the chalk bedrock under the winery. This release is built on the 2020 vintage, and with fewer than 2,500 cases from the whole estate in a typical year, there's never much to go around.
