The variety grows in essentially one place on earth, Cour-Cheverny, a sliver of an appellation in the woods of the Loire where it is the only permitted grape, and Les Acacias comes off Herve Villemade's oldest Romorantin parcels on sand and clay studded with silex flint. Villemade took over his family's vines in Cellettes in 1995 and converted everything to certified organic farming in 2000, after the wines of Marcel Lapierre and Thierry Puzelat convinced him that working without sulfur demanded far cleaner fruit. The grapes are direct-pressed, cold-racked off their gross lees for a day, then fermented and aged on the fine lees in 500-liter barrels for a full two years before bottling unfined, unfiltered, with a single gram of sulfur per hectoliter. 2015 was a hot, dry summer in the Loire that produced unusually ripe fruit, and the decade since has turned that ripeness into waxy, honeyed depth while Romorantin's ferocious acidity keeps the whole thing taut.
