It comes from less than four acres of vines on a ridge 1,200 feet above the Pacific, so there's never much of it. David Hirsch loved Barolo and meant to plant Nebbiolo on the rocky 40% slope above his house, until Burt Williams of Williams Selyem told him he was crazy and should plant Chardonnay. He took the advice and planted in 1994 with cuttings from Joe Rochioli, then added a second block on sandstone in 2002. The fruit went into Chardonnays from Williams Selyem and then Kistler before Hirsch first bottled it under its own label in 2006. The vines are farmed biodynamically, and the winemaking stays out of the way: the grapes are pressed directly, fermented without added yeast in French and Eastern European barrels (a quarter of them new) and never stirred on their lees. In 2024, ideal weather at flowering gave a generous crop, which is rare on this coast, and harvest started August 28 with no rain or heat spikes to deal with.
