Hubert hails from the north of France, and brings an outsiders perspective along with an appreciation for traditions. He's slowly acquired vineyards on the border of Epernay and the Côte des Blancs, farming them without pesticides or herbicides. His approach is similar to that of Cedric Bouchard and Ulysse Collin, only bottling single vineyard, single vintage, single varietal wines, but also picking later to ensure maximum flavor development, and reducing dosage. He vinifies and aged in neutral 300L barrels harvested from the nearby Hautvillers forest and the 2010 spent more than 9 years in bottle before release. Aromatically, the wine resonates with white fruits, citrus, and a clear, stony, mineral edge. On the palate, the wine is taught, balancing rich texture with electric acidity which gives the wine a feeling of power and weightlessness. 2010 is an open, giving vintage and drinking it is on par with a bear-hug from your favorite person. A perfect Valentines day kinda wine.
