The fruit comes from a single south-east facing slope in Prepotto, in the Province of Udine, planted on ponca, the marl-and-sandstone marine soil that gives Friuli's wines their texture and nervy acidity; farming is organic. Mario Zanusso runs the vineyards and the cellar, and across the range the grapes are pressed gently so as not to over-extract, with stainless steel and concrete doing the elevage — nothing to muffle the variety's white-pepper signature. This is a red built on balance and slenderness rather than power, which is increasingly the rarer thing.
