Young vines of Carricante, planted at 750 meters of altitude. The vines are 100% ungrafted, or 'franc de pied', meaning there is no American rootstock used. This is also the rare Sicilian wine to still employ a palmento, the stone buildings that traditionally housed a family's wine press and the stone basins where wine was aged and/or stored. The lava stones allowed for natural temperature control, and although the EU generally outlawed the use of these rustic outbuildings (due to hygienic concerns, we imagine), they remain an important piece of Sicilian history.
