Lunatica is 100% Vermentino, one of two skin-macerated whites made at Il Torchio in Castelnuovo Magra in the Colli di Luni zone, though the label reads Liguria di Levante IGT. The estate takes its name from the traditional communal olive press: the Tendola family ran the village press before they ever grew grapes. Everything here is farmed organically without the certificate — the winery is too small to absorb the paperwork — and the vineyard work and harvest are done entirely by hand, on one big contiguous parcel of 12 hectares rather than the usual Ligurian scatter of tiny plots. Fermentations run on indigenous yeasts.
