Ilha do Pico is the island's cooperative, founded in 1949 and made up of nearly 300 micro-scale farming families, and like Produttori del Barbaresco it's proof that a co-op can be the best address in its region rather than merely the safest. Terras de Lava is the entry point: mostly Arinto dos Açores, a variety indigenous to these islands and grown essentially nowhere else, rounded out with a handful of other white varieties. It's fermented entirely in stainless steel and left four months on its lees, with no oak and no malolactic, which keeps everything taut.
