This is the co-op's varietal bottling, drawn from parcels in Criação Velha, the oldest of Pico's growing zones and the UNESCO-listed one, where vines are set into lajido — the flat, jagged black lava that passes for soil here — inside stone-walled currais that break the ocean wind. Some of those vines are past a hundred years old. The fruit ferments on indigenous yeasts, mostly in large old oak vats with a portion in stainless steel, then rests six months on fine lees. The texture that results is almost Burgundian, while the mineral cut underneath stays pure volcanic Atlantic.
