Another rare creature here in California raised in the Chamise Series (sandy loam) soils in the bucolic and biodynamic Martian Ranch in Los Alamos.
Typically grown in the South of France where it is often used as a blender in most Chateauneuf whites to bring acidity to the sometimes fatter varieties but can scarcely be found in some of the more iconic monovarietal cuveés of top houses like Chateau Prefert et al. Clairette- as it’s often called, can make everything from sparkling, light and crispy or left to hang longer for a richer and more complex styles of wine. As you would likely expect, we chose to pick on the earlier side to preserve acidity and focus on coaxing more of the citrus and white flower side of the variety. Whole Cluster pressed and settled then racked to a combination of stainless steel and neutral barrique for fermentation and moved to all neutral barrique to complete malo during its 6 month elevage.
Lean but balanced in textural weight, slight wax and lanolin, lemon curd, white nectarine, persimmon and spice but a ginger bite.
