Jonathan Didier Pabiot started young. He talked his father Didier into converting the family vineyards to organic farming, and in 2016 the domaine became the appellation's first certified biodynamic estate. Elisa, named like its sibling Léon for the Pabiot children, comes from vines just four to ten years old. They grow on clay-limestone and flint-clay soils facing south and south-west near Pouilly-sur-Loire. The farming is no less serious for an entry-level cuvée: vines are planted at 10,000 per hectare. In the cellar, fermentation runs on native yeasts with no added enzymes, and sulfur is kept to a minimum.
