He trained with Fabrice Dodane at Domaine de St Pierre, and his approach is purist: native yeasts, minimal SO2, hands largely off. The 'Les Canons du Jean' series is named for his grandfather Jean (and 'canons' is French vigneron slang for bottles). The D'Jopin is his ouillé (topped-up, oxidatively guarded) Chardonnay — Jura purity at its most direct. Linear, mineral, electric, with the chalky bite the appellation does so well.
