It then aged in neutral oak in a cool cellar carved into the hilltop and rested a full year before bottling. The farming is just as hands-on: the grapes are organic, and every vine is pruned by hand, cane by cane, with no pre-pruning machines to pack down the soil. Hahn arrived at this four-hectare property in 2002, wrote a book about life there called 'Angels in the Cellar', and picks a single piece of music for each vintage to play in the cellar while the wines rest.
