Jean Orsoni and Juliette Puyperoux took over family vineyards here in 2020, farming organically and working with a deliberately light hand. The Pinot Noir vines sit on clay-limestone with white marl, southwest-facing. Fully destemmed, the fruit is gently worked with light daily pressings and a couple of foot punchdowns near the end of fermentation, then aged about eight months in used barrels with no new oak. The result is a finely drawn Savigny Rouge: floral, red-fruited, elegant, and finished with the gentle bitter-grip that adds Burgundian complexity.
