Philippe Valette's father was the first farmer in the region to stop selling his grapes to the co-op and bottle his own domaine wine. When Philippe finished wine school in 1990, he decided to convert the vineyards to organic farming. Today he farms his Chardonnay without chemical treatments, which is a big part of why he's known as one of the godfathers of natural winemaking in the Mâcon. The house is patient in the cellar too: depending on the cuvée and the year, wines spend anywhere from six months to five years in old oak.
