When Philippe finished wine school in 1990, he converted the family vineyards to organic farming. The old vines for this bottle grow in clay-limestone near Chaintré, a small village at the southern edge of Burgundy where the Mâcon meets Beaujolais. Across the estate, grapes are pressed directly, fermented with native yeasts and aged in old oak.
