The Valettes farm 8.5 hectares in Chaintré, a small village at Burgundy's southern edge where the Mâconnais meets Beaujolais, and three generations of the family have worked that land. Philippe's father was the first grower in the area to stop selling his grapes to the co-op and bottle his own wine. Philippe went further: when he finished wine school in 1990 he decided to convert the vineyards to organic farming. Today he farms his Chardonnay without chemical treatments.
