Philippe Valette's father was the first grower in the area to stop selling his grapes to the co-op, and Philippe has kept that independent streak going in the vineyard and the cellar. The Chardonnay here is farmed organically on clay-limestone. Philippe's style rests on long élevage and minimal intervention, so the site does the talking rather than the winemaker. The family works 8.5 hectares from Chaintré, a small village at Burgundy's southern edge where the Mâcon gives way to Beaujolais. Across the estate, the barrel-fermented whites are picked by hand and fermented with native yeasts.
