Hébrart has holdings in a number of top sites in both the Vallée de la Marne and the Côte des Blancs but is a specialist in the great village of Mareuil-sur-Aÿ, where you find top spots like the Clos des Goisses and Selosse’s Sous le Mont. When he blends his top cuvées, he has a lot of great source material to choose from but even Hébrart’s entry-level wines are pitched absolutely perfectly for Thursday. They're elegant and complex, and will elevate any dish. But they're not flashy or over the top: more supporting players than showboaters. "Hébrart’s wines have a broad appeal: if you like to think about your wines, they’re intellectually engaging enough to satisfy you; on the other hand, if you’re just looking to drink, they’re simply delicious." - Peter Liem, Champagne Guide

Antonio Galloni

"The 2015 Brut Spécial Club Oger Grand Cru is an attractive, powerful wine. Citrus peel, white flowers, chalk and the savory notes typical of so many 2015 are nicely laced together. I would give the 2015 a year or two in the cellar to come together, as it is a bit disjointed at present, but I would not wait too long, as flavors that are savory today may very well develop into more overpowering vegetal notes over time. The Oger is a blend taken from the Terres de Noël, Brulis, Champ Nérons and Fondy lieux-dits. Dosage is 4 grams per liter." -Vinous

"Disgorged in July 2019, Hébrart's 2015 Brut Premier Cru Special Club is showing as well as I predicted, wafting from the glass with scents of white peach, apple blossom, iris, papaya and freshly baked bread. Medium to full-bodied, charming and gourmand, it's elegantly fleshy, with succulent acids, an ample core of fruit, a delicate pinpoint mousse and a mouthwateringly saline finish." -Robert Parker

"Ripe raspberry and nectarine fruit notes are underscored by minerally smoke and brine in this well-balanced Champagne. Lightly juicy acidity keeps you returning for another sip, and hints of honeysuckle and ginger play on the finish. Disgorged July 2019. Drink now through 2028."

Champagne

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon. But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs. Toast with these wines, for sure. But also treat them like the great wines they are: taste, drink, explore!
