Going sans soufre in Champagne is a high-wire act, and you can only pull it off with farming like hers. She works just 2.5 hectares in Polisot with biodynamic certification, makes her own compost, plows, and de-buds every spring to keep rot away. Polisot sits in the Côte des Bar at Champagne's southern end, closer to Chablis than to Reims. The climate there is slightly warmer, which Pinot Noir especially likes, and the Kimmeridgian limestone underneath keeps the wines fresh in the way Chablis is fresh. Both fermentations, the first and the second in bottle, run on native yeast that Moreau cultivated from her own grapes during the 2003 harvest. She named the estate after her grandmother, Marie Courtin, a \"woman of the earth,\" and a Champagne with nothing added to mask the fruit or the place fits that name. Take her advice and pour it into a white wine glass rather than a flute, because the extra air helps it open up.","brand":"Polaner [POL]","offers":[{"title":"Default Title","offer_id":45064043954233,"sku":"NYC-4-POL-`FMC182`-101725-43","price":139.99,"currency_code":"USD","in_stock":true}],"thumbnail_url":"\/\/cdn.shopify.com\/s\/files\/1\/0125\/1518\/0601\/files\/template-bottleimg_8b791613-1483-4f28-8f62-d24dea5d5415.jpg?v=1791908831","url":"https:\/\/nyc.flatiron-wines.com\/products\/marie-courtin-champagne-concordance-extra-brut-sans-soufre-2019-750ml","provider":"Flatiron Wines \u0026 Spirits NYC","version":"1.0","type":"link"}
