The Chenin comes from dryland-farmed bush vines in the Paardeberg, in the Swartland, over four decades old; the Verdelho from two cooler sites, one on decomposed granite and clay in the Voor Paardeberg, one on Bokkeveld shale in Bot River. Winemaking is as hands-off as it gets: hand-harvested, whole-bunch basket-pressed, fermented with indigenous yeast in 400L and 225L French oak, full malolactic, ten months on old oak, bottled unfined. That's a lot of care for a wine that asks very little of your wallet.
