In Lazio, you can find a group of nuns making extraordinary wine with the assistance of a rather noteworthy winemaker — Giampero Bea, the successor to the celebrated Paolo Bea. They share Bea's rare combination of wildness and elegance. They are unique, fun and playful, while still showing off serious skill as well as the viticultural heritage of southern Italy.

A blend of Verdicchio, Trebbiano and Malvasia, grown organically and naturally in volcanic soils, this is at turns savory, earthy, floral and lightly aromatic, this is a incredibly complex and lively on its own or paired with a multitude of dishes.

The Coenobium is the basic wine of the Monastery with an approximate annual production of 12000 bottles, about 80% of which is shipped through us to satisfy the US market. Its intrigue comes from the volcanic soils that underlay the vineyards and the longer than usual contact that the fermenting juice has with the skins … this being a vinification technique encouraged by Bea.
